  • 1 teaspoon salt
Wet Ingredients
  • 2 cups pumpkin puree or applesauce
  • 2 cups sugar reduce slightly if using sweet applesauce
  • 4 eggs
  • 1 cup oil or melted butter
  • 1 teaspoon vanilla extract
Optional Add-Ins
  • 1 cup chocolate chips
  • ¼-1/2 cup millet for extra crunch
  • ¼ cup cocoa powder or chocolate protein powder
  • 1-1/12 cup fresh blueberries

Equipment

  • 2 standard muffin tin or mini muffin pan or casseroll dishes if preferred
  • 2 bowls large, medium

Method
 

  1. Preheat oven to 350°F and prepare a standard muffin tin or mini muffin pan with liners or oil.
  2. In a large bowl, whisk together the dry ingredients.
  3. In a separate bowl, mix the wet ingredients until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently to form the muffin batter. Fold in optional add-ins if desired.
  5. Scoop batter into muffin cups, filling each 2/3 full.
  6. Bake for 25–30 minutes until golden brown and a toothpick inserted comes out clean.
  7. Cool in the pan briefly, then transfer to a cooling rack.
